We are a homeschool family. I took my son out of public school 2 years ago and my daughter last year. It wasn’t because of anything in particular with the school is was more because it would be a better fit for our kids to not only get the education they need but also the morals, values, and other responsibilities/life skills that they need. It has been such a great thing for our family.

S’mores Bars

Happy Friday, Hope you’re having a great day so far and looking forward to a great week. I’m making Monday my foodie day because well everyone uses “Foodie Friday” plus I can get the baking done, or my aunt can get the baking done over the week/weekend and have it ready for Monday, so look for new recipes every Monday! As you know {if you follow Raised Southern} I went to Pittsburgh a little over a month ago to see my sister-in-law graduate college with her Bachelors and I thought it was perfect timing because it’s almost been a year since I’ve seen them and it was time for a nice surprise for them.

My aunt and I planned it all, as we usually do and had to struggle to not “spill the beans” on our surprise. Luckily it all worked out, better than planned and everyone was surprised and excited. We decided to do a little baking the next morning all together because we never get to hang out and cook together and we let the graduate choose what we we’re baking. Lexy chose S’mores Bars and let me tell you these should come with a warning because they are sooooo good.

Summer is here and the kids are out of school which mean they are eating you out f the house because their home all day and that’s all they want to do is eat, eat, eat! As a mom all I want is for my kids to at least eat healthier foods instead of their junk food favorites. Cereal is most children’s favorite thing to eat and some (like mine) could eat it all day, everyday, in several different forms and I’m okay with that because now a days cereal even the “sugar kind” as my parents once called it is now a much better choice for them and is now offered by General Mills, and Gluten Free!

Roasted Red Pepper & Cheese Roll-up

One of our favorite lunches is Roll-ups not those fruity things your kids love but actual food roll-ups. This has become a favorite in our home and one that is asked for often by my picky eaters and it has hummus in it. (shhh, that’s a secret).

Roll-ups are easy to make and you can add anything you like to them. Another one of our favorites is the Pepperoni Pizza Roll-up You really can make any kind you want with any ingredients. I was making this 3-step Roasted Red Pepper Hummus from Bush’s Hummus Made Easy and thought, it’s almost lunch time what are the kids going to have? & we decided on roll-ups, but the kids thought just cheese roll-ups, I explained with a twist. Frozen Yogurt Bites

I LOVE Yogurt, it’s one of those foods that I could eat everyday and never get tired of it. With the weather getting hotter and hotter and  I will be looking for a cool treat everyday to enjoy. However let’s be honest, ice cream will make me happy but my body won’t like it as much.
